Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large bowl, mix the almond milk, water, gluten-free flour, garlic powder, onion powder, smoked paprika, and salt. Whisk until smooth.
Dip each cauliflower floret into the batter, ensuring it's fully coated, then place onto the prepared baking sheet.
Bake in the oven for 20 minutes, flipping halfway through.
In a separate bowl, mix the melted vegan butter with the buffalo sauce.
Once cauliflower is done baking, brush each floret with the buffalo sauce mixture.
Bake for an additional 15-20 minutes or until crispy and golden brown.
Serve immediately.
