Instructions

  1. Start by preparing your dipping sauce. In a bowl, whisk together all the dipping sauce ingredients until well combined. Set aside.

  2. Fill a large bowl with warm water. Dip a rice paper sheet into the water for a few seconds, ensuring it's fully submerged. Once it softens, lay it flat on a damp cloth or a clean surface.

  3. In the center of the sheet, place a lettuce leaf. On top, layer a few slices of mango, avocado, and some julienned carrot.

  4. Add a sprinkle of fresh herbs: mint, cilantro, and basil.

  5. Begin to roll the sheet tightly, folding in the sides as you go, similar to a burrito.

  6. Repeat the process with the second rice paper and remaining ingredients.

  7. Serve the rolls sliced in half, with the dipping sauce on the side.

Note

Substitutions:

  • If mangoes aren't available, peaches or ripe papaya are good alternatives. For a bit of crunch, you can also add thinly sliced cucumber or bell pepper.

Pairing:

  • These rolls pair beautifully with a cold, crisp glass of white wine, perhaps a Sauvignon Blanc or a fresh iced herbal tea.

Tip:

  • Wet your fingers slightly while rolling, as it helps in avoiding the rice paper from tearing.
