Vegan Spinach and Mushroom Calzone

Preheat the oven to 400°F (200°C).

In a pan over medium heat, sauté the mushrooms and spinach with a dash of olive oil until soft.

In a mixing bowl, combine the sautéed veggies, vegan ricotta, garlic powder, red pepper flakes, salt, and pepper. Mix well.

Roll out the pizza dough on a floured surface into a circular shape. Place the filling on half of the circle, leaving some space around the edges.

Sprinkle vegan mozzarella over the mixture.

Fold the empty half of the dough over the filling to create a half-moon shape. Pinch and seal the edges.

Brush the top with olive oil for a golden finish.

Bake for about 20 minutes, or until the calzone turns golden brown.
