Preheat your grill to medium-high heat.
In a mixing bowl, whisk together olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Toss the tofu and vegetables in the marinade until well coated.
Thread the tofu and vegetables alternately onto skewers.
Place the skewers on the grill and cook for 4-5 minutes on each side or until vegetables are tender and tofu is slightly charred.
Once cooked, remove from grill and garnish with fresh herbs if desired. Serve immediately.
