Ingredients
  • 1/2 cup short-grain rice (like Arborio)
  • 1 tbsp olive oil
  • 1/4 onion (finely chopped)
  • 1 clove garlic (minced)
  • 1/4 red bell pepper (sliced)
  • 1/4 yellow bell pepper (sliced)
  • 1/2 small zucchini (sliced)
  • 1/4 cup frozen green peas
  • 1/4 cup diced tomatoes (canned or fresh)
  • 1/4 tsp saffron (or turmeric for color)
  • 1/2 tsp smoked paprika
  • 1 cup vegetable broth
  • Salt and pepper (to taste)
  • Fresh parsley and lemon wedges for garnish
Instructions
  1. In a paella pan or large skillet, heat olive oil over medium heat.

  2. Add onions and garlic. Sauté until translucent.

  3. Add bell peppers and zucchini. Cook until slightly softened.

  4. Stir in rice, ensuring it’s well-coated with the oil and vegetable mix.

  5. Add in the diced tomatoes, green peas, saffron, smoked paprika, salt, and pepper. Stir well.

  6. Pour in the vegetable broth and bring to a simmer.

  7. Reduce heat to low and let it cook uncovered until the rice is tender and the liquid is absorbed, about 20 minutes.

  8. Garnish with fresh parsley and serve with lemon wedges.
