Vegetarian Veggie Tofu Stir-fry (Asia)

In a pan over medium heat, add the sesame oil

Once hot, add the tofu cubes and fry until they are golden on all sides. Remove and set aside.

In the same pan, add a bit more sesame oil if needed, then stir in the garlic and ginger. Sauté for about a minute or until fragrant.

Add the bell pepper and carrots. Stir-fry for about 3-4 minutes until slightly tender.

Mix in the baby bok choy and stir-fry for another 2 minutes.

Return the tofu to the pan. Drizzle with soy sauce and sprinkle with red pepper flakes. Stir well to coat the tofu and veggies.

Once everything is hot and well-mixed, transfer to a plate.
